Ekşili Anadolu Çorbası (Lentil and Barley Soup)

Serves 4

Try this delicious, healthy soup at home

Ingredients 

100gm red lentils
50gm barley 
50gm chickpeas 
40gm tomato paste 
5gm dry mint 
10gm salt 
1gm black pepper 
15ml corn oil 
30gm onion 
1 garlic clove 
1gm cumin
30ml pomegranate molasses 


Method 

Boil the chickpeas, barley and lentils in water separately
Sauté the onions and garlic, before adding the tomato paste and let it cook for 4 minutes
Add the dry mint and cumin powder, followed by the pomegranate molasses and mix well
Mix the barley, lentils, and chickpeas in a saucepan. Add the tomato sauce and let it cook for 20 minutes
Don’t forget to check the seasoning before serving

Ingredients 

500gm zucchini, peeled and grated
100gm carrots, peeled and grated
50gm beyaz peynir (white cheese), crumbled 
2 eggs
100gm flour
1⁄2 bunch of finely chopped scallions
1⁄2 bunch of finely chopped dill
1 teaspoon black pepper
1 teaspoon salt
Oil (for frying) 


Method 

Squeeze the grated zucchini to remove excess water
In a bowl, combine the grated zucchini, carrots, cheese, scallions, dill, salt, pepper, and eggs, mix well
Add the flour gradually making sure that the mixture stays at a pouring consistency
Heat the oil, and once hot take a tablespoon of the mixture and drop into the oil
Fry on both sides until it turns golden brown
Continue with the rest of the mixture and serve fritters at room temperature
Serve hot, with yoghurt and mint

When we heard there was a brand new food haven opening, offering up some of the tastiest Mediterranean fares in town, we had to check it out. 

With our interest piqued and bellies empty, we took a trip to Mall of the Emirates in Dubai to check out L’Eto and see if it lived up to the hype.


The Vibe

The first ever L’Eto café (or ‘caffe’ as they call it) opened in London in 2011 and has since spread across the British capital with six branches. The favourite spot has now expanded and opened up on our shores in Dubai. 

Located on level 1 in Mall of the Emirates, the spacious café is bright and airy with mirrored wall accents, eclectic art and brasserie-style marble counters and bars filled with tempting baked goods, salads and plenty more nibbles.

The atmosphere is stylish yet casual, making it the perfect pit-stop for any occasion – from pre-cinema bites to supper with the whole family. 


Menu Must-Try

From fresh-filled wraps to superfood salads, unique burgers, pasta and quiches, it’s all here, and there is guaranteed to be something to tickle all taste buds. 

The menu is influenced by the tastes of the Mediterranean with dishes such as teriyaki salmon, roasted rosemary turkey or honey roasted pumpkin and kale.

On a recent visit to the bustling eatery, our friends in the kitchen opened up their recipe book to reveal the method behind one of their most in-demand dishes, Pulpo a la Gallega - freshly boiled octopus with delicious potatoes.

Prep and cook time: 1 hour, 10 minutes
Serves: 1 person

Ingredients:

  • 80 grams octopus (sliced to 3 – 4mm thick)
  • 40 grams potato (slice to 3 – 4mm thick)
  • 3 ml olive oil
  • 1 gram paprika
  • 0.5 gram sea salt

 

Method:

  • In a large cooking pot, boil the octopus for 40 minutes, before slicing into an 80 grams portion.
  • Next, boil the potatoes in the same cooking pot used for the octopus until tender, for around 20 minutes.

ÇERKEZ TAVUĞU

Shredded chicken and walnuts
Serves 5 people

Ingredients:

•    1 whole chicken
•    150gr walnuts
•    1⁄2 loaf of stale bread, crusts removed
•    15gr sweet paprika
•    5gr black pepper
•    5gr cumin
•    15gr salt
•    500ml milk
•    2 cloves garlic, minced
•    1 yellow pepper, peeled and quartered
•    1⁄2 bunch parsley
•    1 carrot, peeled and chopped coarsely


Method:

•    Cut the whole chicken into quarters and place in a large stockpot with onions, carrots, and parsley.
•    Add eight cups of water and over a medium heat, boil the chicken. Once cooked, place to the side and let it cool before shredding.
•    Soak the bread in milk for about five minutes before removing, squeezing out the excess milk and breaking it up.
•    Pass the walnuts and sweet paprika through the grinder then place on a dry pan and heat slightly until walnuts become aromatic. Remove and place in cheesecloth to squeeze out the walnut oil, which you will use later.
•    Combine the walnuts, two ladles of the chicken stock, salt, pepper, cumin, garlic, bread and milk, cook over a medium heat for three minutes until you get a medium white sauce consistency.
•    Place shredded chicken on a plate, pour the sauce over, and top with the walnut oil.
•    Serve on its own or on top of crusty bread.


KAPALI PIDE

Serves 5 people

Whip up a tasty Turkish-style pizza filled with all your favourite ingredients


Ingredients:

Dough
•    500gr flour
•    50gr fresh yeast
•    Teaspoon of salt
•    Warm water

Topping
•    Watered down yoghurt
•    Melted butter

Filling
•    750gr diced lamb
•    250gr grated tomatoes
•    50gr finely chopped peppers
•    1/3 bunch parsley, finely chopped
•    Teaspoon of salt


Method:

•    Combine all ingredients to form the dough, knead and cut into five equal pieces.
•    Cover and leave to rest and rise for 45 minutes.
•    Combine all the filling ingredients in a bowl, mixing well.
•    Take a piece of dough and flatten into an oval shape, place a fifth of the meat mixture over the top and fold from the sides about 1cm thick to encase the filling.
•    Brush some of the watered down yoghurt around the edges.
•    Bake at 180C for 8 to 10 minutes until golden brown.
•    Remove from oven and brush the sides with the melted butter and serve.

Warm your mug:
If you pour hot coffee into a cold ceramic mug, it will pull the heat from your brew leaving it tepid and unpleasant. Instead, rinse your cups with hot water first.

Clean your kettle/coffee machine:
It may sound obvious, but kettles and coffee machines often go years before being cleaned. While boiling water does indeed kill germs and bacteria, it does little to stop the build-up of salt and calcium (which comes from tap water). Depending on usage, clean your machine 2 to 3 times a year.

Use freshly roasted beans or ground coffee:
Did you know coffee has a shelf life? While drinking coffee that’s been in the cupboard too long won’t hurt you, it will certainly affect the taste. Coffee should be used within 30 days of roasting and if pre-ground, stored in a dark air-tight container.

Don’t be stingy with the coffee:
Experts agree that the standard measure for brewing coffee for proper strength is two level tablespoons per cup. Use any less coffee and more water and the brew will turn bitter.

Foodie Hotspot: Tribes

Nestled in Mall of the Emirates’ Fashion Dome, Tribes is a casual eatery offering up a little something to suit all taste buds – especially for meat-lovers. A top spot for both lunch and dinner, the restaurant is open to all – as long as you bring an appetite!

THE ATMOSPHERE
The space is drenched in rich earthy colours with safari-inspired wooden accents, sheepskin covered leather seating, stonewalls, tribal light fixtures and authentic drums and shields dotted throughout the restaurant.

Many of the servers are originally from Africa and are highly knowledgeable on the dishes – so be sure to ask them for their guidance while combing through the menu.

THE FOOD
The African-themed menu draws on the exotic flavours of the continent with plenty of belly-warming meat dishes, fresh salads and seafood fillets.

For die-hard carnivores, you’re in for a treat. At Tribes you’ll be happy to discover an extensive menu filled with meaty favourites including beef short ribs, Moroccan Spiced Lamb Chops and rib-eye steak, along with mouth-watering stacked burgers and Madagascar Chicken.

If you fancy a taste of the sea, try the Cape Malay fish curry or Peri-Peri prawns.

A new foodie favourite in Mall of the Emirates to try this weekend    



One of New York’s most popular long-standing restaurants has recently opened at Mall of the Emirates in Dubai. Situated just a stone’s throw from VOX Cinema, Dean & Deluca has already become a foodie hub, offering up gourmet dishes in a casual market-style setting.

THE ATMOSPHERE

Part eatery and part grocer, Dean & Deluca’s latest branch at Mall of the Emirates is a foodie’s fantasy, filled with fresh produce and a wide menu. The décor is light and bright with an open kitchen to catch all the cooking action. Marble floors, subway tile walls and plush leather chairs fill the space. There are plenty of seating options to suit all, whether you’re heading for a bite with your other half or dining in a big group, family-style.

THE FOOD
With an emphasis on freshly sourced ingredients, the food at Dean & Deluca is not to be missed. Offering breakfast, lunch and dinner every day of the week, the restaurant never fails to attract the hungry masses.

For breakfast, we recommended loading up on the eggs benedict with smoked salmon, just-baked pastries or, for a taste of the Middle East, opt for the spicy foul tagine with zaatar fatayer on the side.

Foodie Hotspot - Apres

First opened just over ten years ago, Après is a bustling spot nestled away in Mall of the Emirates. With views spanning over Ski Dubai’s winter wonderland below, this ski lodge-inspired restaurant and bar is the perfect spot to refuel after hitting the shops.

THE ATMOSPHERE
Despite the location in sunny Dubai, a step inside Après and you’ll be whisked away to a European ski lodge in the Swiss Alps. The space is dimly lit with low-hanging chandeliers and floor-to-ceiling windows with views of the Ski Dubai slopes. The chalet chic interiors are cosy and inviting with various seating options, from leather booths to intimate tables by the windows.

THE FOOD
While the cocktail and bar menu is a popular draw at this elegant watering hole, the food also comes highly rated. The menu is filled with contemporary European classics such as carpaccio, stone-fired pizzas and traditional Swiss cheese fondue – a favourite among loyal customers.

If you’re looking for something a little lighter, try one of their healthy salads – the fig and cheese salad and tiger prawn and avocado are delicious.

Follow our lead and opt for a selection of sharing appetisers including the wild mushroom and parmesan arancini, steamed edamame and béchamel sauce and roasted duck flatbread – you can choose any three appetisers for a deal of Dhs110.

For mains, we can vouch for the rosemary- and garlic-infused baked Camembert, pan-seared sea bass and the melt-in-your-mouth beef bourguignon – all of which were packed with flavour and cooked to perfection. The pizzas are another menu hit; try the Piccante Dolce if you fancy a meaty-topped fiesta.

Foodie Hotspot: Besh

Craving a taste of the Middle East? Take a break from the shops in Mall of the Emirates, and make your way to Besh Turkish Kitchen.

Nestled on the fifth floor of the Sheraton Hotel in Mall of the Emirates, the restaurant only recently opened their doors and have already attracted buzz around town among foodie fans for their mouth-watering Turkish cuisine.

In collaboration with renowned chef Vedat Basaran, the menu at Besh seeks inspiration from authentic cookbooks dating back to over 150 years ago. Every tiny detail has been achingly thought out, from the flour to bake traditional pide flat breads (originally hailing from Anatolia), down to the special spices sourced directly from Turkey’s famed spice bazaar.

THE ATMOSPHERE
A step inside Besh and you may feel as though you’ve wondered into an ornate Ottoman palace. Though the restaurant offers a more laidback and casual dining experience, the interiors is certainly something to see. The eclectic tiled floors and ceramics are reminiscent of the cities’ historic roots, while the Emerald green stained glass windows, brass-coated bulb lighting and glossy marble accents add a touch of luxury to the space.

THE FOOD
Chef Vedat and his highly trained team have spent many months hand picking each ingredient and crafting up a delicious menu.

One quick glance at the menu and our expectations are met. There is the lamb Kapali Pide and Mücver (zucchini fritters). Little ones are also welcome at the family-friendly restaurant - kids will love the fresh simit and lahmacuns bread topped with a variety of meats and cheeses. The dough is baked in a traditional dome-shaped oven and is some of the tastiest we’ve tried outside of Istanbul.

After many minutes spent drooling over the menu, our table opted for a selection of dishes to sample including the Turkish mezze platter, grilled meets, healthy salads and a variety of cheese pides.

The food was quick to the table and freshly prepared. The ‘Karisik Izgara’ (mixed grill) was a clear winner and a standout dish amongst the feast. The meat was flavourful and tender – clean plates all round!

If you still have space for something sweet, we highly advise trying the Turkish delights along with a fruity shisha on the side.

THE SERVICE
The waiters were on hand to help out with any menu recommendations and proved knowledgeable on how each dish was prepared. Our friendly server revealed that most of the dishes, especially the meats, are prepared using traditional cooking methods such as Guveç clay pots. So this is definitely the place to go if you fancy trying a truly authentic Turkish meal.

Foodie Hotspot 800 Degrees Neapolitan Pizza

    With hundreds of shops, attractions and activities, a fun day out at Mall of the Emirates may leave you in need of a refuel. And what better way to feast than with a mouth-watering pizza at one of Dubai’s newest restaurants, 800 Degrees Neapolitan Pizza.

THE ATMOSPHERE

Located in the mall’s new extension, you might sniff out the tempting scents of just-baked pies before you even reach the restaurant.

The space is bright and airy with monochrome checkerboard floors. White subway tiles line the walls and a colossal wood fired pizza oven stands proud in the corner of the restaurant.

Whether you’re visiting solo or in a large group, 800 Degrees Neapolitan Pizza has plenty of seating for all.

The vibe is relaxed and casual with wooden tables filled with families, couples and teenagers alike. Everyone is welcome here and no reservation needed, but be prepared to occasionally wait in line on weekends – it’s well worth it!

THE FOOD

The restaurant allows visitors to pick from the menu or personalise their own pizza with a generous choice of ingredients ranging from nine types of cheese to dozens of meats and veggies. A choice of three crusts are also available; Original Neapolitan, thin or gluten-free.

We opted for the Capricciosa (Tomato sauce, Mozzarella, artichokes, mushrooms, kalamata olives and rosemary turkey) along with the Bufalina (Buffalo Mozzarella, Parmigiano Reggiano, Olive Oil and fresh basil) both on a traditional Original Neapolitan crust.

The dishes were quick to the table and arrived steaming hot out of the oven.

Let’s start with the handmade crust, which we discovered was made using flour from the ancient Molino Caputo in Naples – it arrived crispy on the outside and chewy on the middle with plenty of dough.

The pizza base was thin and firm, perfect for layering on lots of toppings, while the sauce was smooth, tangy and bursting with ripe tomatoes. One bite in and we were impressed.

All of the ingredients are, as expected, high quality and full of flavour, especially the creamy mozzarella cheese topped with a drizzle of extra-virgin olive oil.

If like us your eyes are bigger than your belly, try one of 800 Degrees Neapolitan Pizza’s tasty starters, side dishes or salads. We recommend ordering a pile of sharing plates, such as the feta cheese bread, cherry tomato and pesto burrata and meatballs sprinkled with cheese.

Foodie Hotspot: Brunswick Sports Club

    After enjoying a round of retail therapy at the UAE shopping malls, swing by Brunswick Sports club to refuel in a relaxed setting.

    Brunswick Sports Club is the first licensed venue by the duo behind the widely popular Dubai restaurants Tom & Serg, The Sum of Us and Common Grounds.

    With doors opening at noon every day, this hip eatery is a new lunchtime favourite. If evening shopping is more your style, grab a late night bite at Brunswick until 2am. 

THE ATMOSPHERE

Wander towards the Sheraton Hotel in Mall of the Emirates, and you’ll soon come across a colossal black sliding door emblazoned with the BSC logo.

The brains behind the business describe the inside interiors as “a mash up between an industrial Brooklyn gum and a rustic Melbournian neighbourhood bar”. The light loft-inspired space is dotted with hanging bulb light fixtures, white subway tiles, long wooden benches and fresh greenery embedded into the tables.

There is also a bustling bar area with lots of tall seating areas and plenty of oversized screens for catching all up on all the biggest sports matches with cocktail or pint.

THE FOOD

Go with an appetite as Brunswick Sports Club serves up hearty plates of all your beloved pub dishes. With 13 to try, the burgers are a house speciality and range from smokey pulled BBQ beef to their already Instagram-famous Mac Daddy bun – a decadent masterpiece oozing with meaty patties and cheesy pasta.

The menu also boasts hot dogs, towering salads and surf & truf.

If you’re visiting with a group, opt for a variety of sharing platters. We highly recommend the spicy wedges, buttermilk fried chicken and BBQ lamb ribs.

If you fancy indulging further, order a heap of their house fries, which you can customize with extra treats including jalapeño cheese & crispy shallot and egg, or hollandaise, pecorino & truffle.

For dessert, don’t leave without trying at least a few bites of the sundae which will arrive with peanut and pretzel flavoured ice-cream, a banana custard doughnut drizzled with hot fudge sauce and passion fruit jam.

While this may not be the spot for those on a health kick, the tasty dishes are well worth every single calorie – we all deserve a day off the diet!

If the Dubai shopping scene has left you in need of a refuel, stop by the newly opened Eat Greek in Mall of the Emirates. Here you’ll be treated to a traditional Greek feast in a beautiful setting.

THE ATMOSPHERE

From the moment you step into the Mediterranean-inspired restaurant, you’ll feel as though you’ve been transported to Greece. The décor is typically Greek with rustic wooden floors, stone washed walls, lush green trees dotted among the space and an open-air kitchen to catch all the exciting culinary action. The tables are laid out with gingham print napkins and tins of fresh lemons set in trays along with various condiments, dried oregano and olive oil. The setting makes for a picturesque backdrop to enjoy your meal.

THE FOOD

Eat Greek’s diverse menu offers plenty of family-style sharing dishes ideal for lunch or dinner. There is something for everyone from steaks, burgers and grilled meats to healthy wraps, fish and salads. There is also a menu for the little ones with kid-friendly dishes such as chicken nuggets and tomato pasta.

Follow our lead and start with the creamy tzatziki, crispy fried calamari and a slab of the peppery baked feta with a side of toasted pita bread.

Meal Of The Month: Seafood Paella

Sudqi Naddaf, Executive Chef at the Kempinski Hotel Mall of the Emirates, shares his renowned fresh fish recipe for Salero Tapas & Bodega

Located in the Kempinski Hotel Mall of the Emirates, Salero Tapas & Bodega, one of Dubai’s best restaurants for Spanish cuisine, offers an authentic taste of España.

Headed by culinary talent Chef Sudqi Naddaf, visitors will be treated to traditional fare with a unique twist.

Here the chef shares his six easy-to-follow steps to perfecting seafood paella.

 

 

PAELLA 101:

An icon of the Spain’s national cuisine, made with a thin blanket of saffron-scented rice with a crunchy bottom crust and studded with fresh seafood.

Prep Time: 15 Minutes

Cook Time: 15 Minutes

Ingredients:

  • 50g cuttlefish
  • 50ml olive oil
  • 50g red pepper
  • 50g green peppers
  • 300g Bomba (short grain) rice
  • 20g tomato paste
  • 1g saffron
  • 600ml fish stock
  • 250g mussels
  • 250g clams
  • 10pcs prawns
  • 10g garlic
  • Pinch of salt

Preparation:

  1. Heat a drizzle of olive oil in either a flat big pan or a paella pan.
  2. Sauté the garlic, cuttlefish and bell peppers and gently stir for few minutes until the fish is cooked.
  3. Next, add the rice and saffron and continue sautéing for a couple of minutes on a low heat (to ensure the rice absorbs all the flavours), before adding the fish stock.
  4. Once the fish stock is hot, throw in the mussels and clams and thoroughly mix in the tomato paste.
  5. As soon as the paella is boiling, place the prawns on the top of the rice, which will cook with the steam from the dish.
  6. After 15 minutes the dish will be ready. Rest for five minutes before serving with some lemon on the side.

If you’re in the mood for a taste of the Far East, look no further than the shopping malls in Dubai, where you’ll find plenty of tasty dining options. However, the venue on everyone’s lips is Din Tai Fung.

Hailing from Taiwan, and with branches across America, Hong Kong and Singapore to name a few, Din Tai Fung is one of the latest restaurant chains to open in the new wing of Mall of the Emirates.

THE ATMOSPHERE

The restaurant features two dining areas: an airy section overlooking the shops or a more intimate space near the open-kitchen with views of all the fast-paced culinary action.

THE FOOD

You’ll be in for a real feast at this popular Taiwanese spot. At Din Tai Fung the emphasis is mostly on Chinese snack food with a twist. Think delicious dumplings, fried rice, noodles and wontons.

We find this type of cuisine best enjoyed family-style, with plenty of sharing plates and bites to dip into. Follow our lead and kick off your meal with a mixed basket of Din Tai Fung’s specialty xiaolongbao (soup dumplings). Also order the shrimp and veggie wontons, followed by the hot red bean bun, chilli crispy chicken and the sautéed spinach bok choy.

Next up, you must try their mouthwatering tomato and tofu egg flower soup – you won’t be left disappointed.

Foodie Hotspot: Leila

Hailing from Lebanon – the land of mouth-watering cuisine – Leila restaurant originally landed in the emirate back in 2012, with their first location in Downtown Dubai. The popular eatery now has a handful of restaurants across Dubai, including a flagship branch in City Centre Mirdif.

Meal of the month: Teriyaki grilled salmon

Waleed Al Sadik, Executive Chef of Sheraton Dubai, Mall of the Emirates Hotel, shares his delicious recipe for Vantage Bar and Lounge Sheraton Dubai Mall of the Emirates Hotel.

After discovering a passion for all things culinary in his native country of Jordan, Chef Waleed moved to Dubai back in 2003 to develop his talents and hone his skills in international cuisine. Fast forward 12 years and the foodie whiz is treating palates to his signature Middle Eastern flavours with Indian, Asian and Mediterranean twists at Sheraton Dubai, Mall of the Emirates Hotel.

“Food should taste as good as it looks. It’s all about creativity. I have always co-related everything with food and colour. If I look at the UAE flag, I think of tomatoes for the red, herbs for the green, flour for the white and the black, pepper. My mind then look for ways to mix these ingredients,” Waleed reveals.

Here the top chef shares the five easy steps for his delicious salmon recipe available at one of Dubai’s best spots, Vantage Bar and Lounge.

Ingredients:

  • 160g Scottish Salmon (skin on)
  • 100g Teriyaki sauce
  • 80g Baby bok choy
  • 30g Garlic
  • 5g Red pepper
  • 5g Yellow pepper
  • 2g Red radish
  • 3g Green leaves (preferably fressie)
  • Salt to taste
  • Handful sesame seeds

Preparation: 

    1. Whisk the teriyaki sauce, ginger, salt and sesame seeds together in a bowl before placing the salmon fillets to marinate for 10 minutes.
    2. Meanwhile, heat ¼ cup of water in a medium skillet pan over a high heat and bring to boil.  Add the bok choy and allow to steam until almost tender.
    3. Grill the salmon with the skin down first to cook. Keep grilling for 7-10 minutes depending on thickness and personal cooking preference. 
    4. Julienne the red pepper, yellow pepper and radish. 
    5. Plate the salmon, bok choy and top with the julienne vegetables and green leaves before drizzling over additional teriyaki sauce.

Meal Of The Month: Slow Roasted Veal Loin With Green Lentils

Andreas Mensch, Executive Head Chef of the Pullman Dubai City Centre Deira and Medley Restaurant, shares his delicious recipe.

Starting his career in Austria, Andreas Mensch previously worked at the Michelin-starred Korso restaurant. From there the talented chef travelled the world,cooking up a storm in kitchens across Norway, America, Russia and Hungary before settling in Dubai at the Pullman Dubai City Centre Deira.

 

 

Here the expert chef shares his popular veal recipe.

Ingredients:

  • 200g Veal Loin
  • 25g Foie Grass
  • 30g Asparagus
  • 70g Green Lentil
  • 10g Celery Root
  • 10g Shallots
  • 5g Balsamic vinegar
  • 5g Pommery Mustard
  • 2g Bay Leaf
  • 1 Stick of Thyme
  • 20ml Fresh Cream
  • 1tbsp Olive Oil
  • Salt & Pepper

Preparation:

1. Season the veal with salt and pepper before spreading mustard over the top and sides, then cover the veal with the fatback.
2. Arrange the veal with garlic and shallots in a pan and roast for 45 minutes at 50 degrees Celsius.
3. Transfer the veal onto a cutting board, slice into ½ inch thick slices and arrange on a platter.
4. Put lentils in a strainer and discard any stone that might have escaped the packers; rinse under cold running water.
5. Turn the lentils into a medium saucepan, cover with cold water, bring to a boil and cook for two minutes. Pour the lentils into a strainer. Drain, rinse the lentils again and clean out the saucepan.
6. Toss the onion, carrot, celery, garlic, and bay leaf into the pan. Pour in the vegetable broth or water, stir in the lentils and bring to a boil. Simmer with slow cooker for 25 to 30 minutes or until lentils are almost tender.
7. Season with salt and pepper and cook for another five to 10 minutes.
8. Drain the lentils and set aside the liquid. Remove the vegetables and discard the bay leaf before finely chopping the veggies.
9. Stir the vegetables and shallots back into the lentils. Add balsamic vinegar and mustard, cooking cream and finally season with salt and pepper.

Serve with steamed asparagus and Fois Gras

After a light bite? There’s plenty of healthy options too, such as the classic nicoise salad and beef carpaccio with rocket and Parmesan. However, you must treat yourself to a side of their French fries, which are seasoned to perfection!

On the dessert front, you’ll be spoilt for choice;from crème brûlée to chocolate fondant, the sweet treats are certainly a highlight. St. Tropez Bistro is fully licensed and boasts a daily happy hour.

Meal of the month- Slow cooked beef cheeks in demi-glace

Chef Sudqi Naddaf from the Kempinski Hotel Mall of the Emirates shares his delicious beef recipe.


Making it his mission to put Middle Eastern cuisine on the international culinary map, Executive Chef Sudqi Naddaf oversees all kitchen operations at Kempinski Hotel Mall of the Emirates in Dubai.

Here the Jordanian chef shares Aspen restaurant’s signature dish, slow cooked beef cheeks in demi-glace…

 

 

 

Ingredients:

  • 300g Beef cheeks 
  • 50g Carrots
  • 50g Celery 
  • 45g Leeks
  • 150g Demi glaze 
  • 10g Thyme 
  • 10g Tarragon
  • 10g Rosemary
  • 100g Tomatoes
  • 15g Salt
  • 8g Pepper
  • 6g Garlic 
  • 20g Onions
  • 45g Olive Oil 
  • 10g Cajun Spices
  • 30g red or white grape vinegar

 

Preparation: 

  1. Pre-heat the oven to 180c.
  2. Marinate the beef cheeks with salt, pepper and cajun herbs. Lightly roll each piece of meat in flour. 
  3. Drizzle olive oil into a heavy pan. Once pan is smoking hot, start searing the beef on each side. 
  4. Drizzle a second medium-sized pot with oil. Once the oil is heated, begin caramelising the vegetables starting with onion, carrots, leeks and fresh tomatoes, in that order. 
  5. When the vegetables start to caramelise, pour some red or white grape vinegar into the same pan and bring to a boil for about 5 minutes. 
  6. Add demi-glace and boil for another 5 minutes. 
  7. Next add the tomato sauce with BBQ sauce and bring to a boil for about 15 minutes.
  8. After 15 minutes the sauce will be reduced. Add the herbs before removing from the heat. 
  9. Pour half of the sauce into an oven tray, then place the seared beef cheeks and the remaining sauce in the pan. Cover with aluminium foil and cook in the oven for 4 hours at 180c until the beef cheeks are soft. 
  10. Serve over saffron risotto.
